Ingredients
- 1 turkey fillet, slices
- sugar
- salt
Method
Make your brine by mixing together equal quantities of sugar, salt and water. You might need to add a little more water to get the desired consistency. Mix the brine and leave for about 2-3 minutes until the sugar and salt have dissolved.
Place your turkey fillet in the brine, cover with cling film and leave for 24 hours in the fridge.
