I'm going to show you how to butterfly a prawn. I thought what I'd do is get one of these enormous prawns, just so that you could really see it for real, and the first thing I'm going to do is just take it out of its shell, raw, so the first thing I'm going to do is just break the head off like that. We could use that for a stock, so don't worry too much about, you know, wastage.

I'm just carrying, working down the body, and I've now got all the flesh out, which is beautiful. Now, what we want to do is just run a line along here, just to take out that top membrane, because in here, you've got the sack which nobody really wants to eat, and various other things, so I'm just going to trim that away. Here we go, quite a large sack.

Right, so we've now got our raw prawn, and what I'm going to do is slice the belly open, along here, like that. Then, you can start to open it up or butterfly it. I'm just going to take a little bit of excess here away because we don't want that.

And that, although it's a very large prawn, that is how you butterfly a prawn. .
