How To Choose A Cut Of Pork

Hi, welcome to Godfrey's. I am Chris Godfrey and today I am going to be showing you a few of my tips about meat. I have been running this shop in Highbury for the last thirty years and it has been in my family for over a hundred years.
One of the most important things about pork is its thigh. And you can tell roughly what the pig has been eating by the fat. If it has been having a lot of high concentrate feeds of protein feeds, the fat is not waxy.
It is very very floppy. You dont want floppy fat. You want firm, nice like wax, lovely, soft and smooth.
And that shows that it has been on a plant based diet, a natural diet with natural foods that the pig would like. You don't really want lean pork, you want fat. That is a really good pork chop because it has got a nice little bit of fat in the muscle.
And that shows that it is a healthy pig. And you know it is going really nice, Although people like lean stuff, It is not going to be the best eating if you have a lean piece of pork. And the other thing you really want to do if you want to roast these, you want to make sure it is nicely scored deep into the fat because most of that will come away in the cooking.
And that just leaves it really soaked in, and dry after roasting. You have to have nice thick scoring on it with nice fat. And also you want to look at the colour.
You want it nice pink. Nice light pink is really nice. You don't want it too dark.
If it is too dark, it sometimes could mean that it has got a little bit older or it is a boar. It is a bore pig. And the other thing is the smell, like if it smells very strong.
It should not have a strong smell. If it has got a very strong, like a firm smell, that is like when they have got bore tint. Which is, when it is a bore pig.
But these ones are all females. They are lovely. And that is how you choose your pork.
