Paul Ellis teaches the viewers on VideoJug how he cooks a simple pork loin in an everyday kitchen setting. When done right, pork loin is a meat that is nice and moist, right out of the oven.
I'm going to show you today how to cook a pork loin. I bought six to eight-ounce piece of pork which I have cut down into two. What I'm going to do now is I'm just actually going to scour and break the skin so it enables the fat to be released and for us to have a nice moist steak in our pans, so we just break it down with a knife, very tough, just scouring it down, scouring the meat.
Also, we're going to want a nice hot pan. So what I'm going to do is I'm actually going to get the pork into the pan, I'm going to sear it off, I'm going to salt and pepper it in a nice bit of olive oil, and straight into the oven for ten to fifteen minutes, and take it out, nice and moist. So I've scoured it down, nice bit of salt and pepper, nice and easy, keep it simple, want a nice little slick pan there, nice bit of olive oil, and that's a hot pan.
I've got my oven ready, pushing the meat away from you, straight into the pan, hear that sizzle, and we want to caramelize that meat in the pan for about two to three minutes to get a nice bit of color. So when I put my meat through the oven, I'll take it out, add some butter to it or some seasoning, or whatever you really want to. It's going to take about two to twenty minutes to cook my pork chop, and with pork, and chicken, it's very important to cook it well done, it's very, very important to kill the bacteria in chicken and pork, so it's a very, very important tip there.
So, nice bit of color in the pan there, season it nicely, salt and pepper. I've cooked it today in olive oil, but you can cook it in grape seed oil. Grape seed oil is very high in omega three, six and nine, very high in that.
Sometimes, you can cook it in sesame oil if you want to do an Asian type dish. I'm keeping it simple. Got the last bit of color coming up over there now, caramelizing, all the fat has been released where I've scoured it, and we're getting a nice bit of color, my oven's ready to go.
So like I've said, it'll go in my oven for about ten to fifteen minutes, I'll take it out, nice and moist, easy peasy again, nice bit of salt and pepper. I've got it on moderate heat. I'm able to walk away from it and come back to it, keeping it moving.
You can put it on a low temperature and cook it fully on the pan, but if you just want to put it through the oven and have to do other stuff, then it's another way of doing it, so just getting it caramelized in the pan in the olive oil, I'm not putting any hot sauce or anything else in there because the hot sauce will burn. If I want to use hot sauce, I'll take it out, right at the end and I'll just get some more flavor into it. So, this is one we'll do now, put my pork into the oven, and that is how I cook my pork loin. .
