- 3 kg beef rib eye
- olive oil
Pre-heat your oven to 180 degree Celsius.
Heat a heavy based roasting tin on the top of the stove.
Rub olive oil and salt all over the beef, then seal it all over in the baking tray until nicely browned. Don't forget to seal the ends.
Bake the beef for about 45-50 minute. Take it out and prod it a little, if it gives way very easily, it is less well cooked in the centre.
Finally let it rest for 5-10 minutes. This stage is important, as it lets the juices seep back into the outside of the meat and gives it a nice even colour when you carve it.
