How To Cook A Vegetable Curry

Bring India a little closer! In this tutorial Chef Emma Marshall shows you how to cook a tasty and healthy mixed vegetable curry.

Ingredients

  • 1 onion, chopped
  • 1 1/2 tsp cumin seeds
  • 500 g mixed vegetables
  • 1 tsp chilli powder
  • 1/2 tsp turmeric
  • 1 1/2 tsp ground coriander
  • 220 g tinned tomatoes
  • 200 ml water
  • salt
  • 3 oil
  • 2 fresh coriander, chopped

Method

Heat the oil in a pan. Add the onions and cook until they are lightly browned.

Once the onions are lightly browned, add your cumin seeds and cook them until they crackle.

Add 500 g of mixed vegetables, such as potatoes, cauliflower, green beans and carrots. Cook these through for 3-4 minutes.

Add your chilli, turmeric and ground coriander. Mix well.

Add the tinned tomatoes, the water and a good pinch of salt. Cook until the vegetables are tender.

Sprinkle with fresh coriander when it is ready.
