How To Cook Arborio Rice

In this Videojug film Paul Ellis shows you how to cook a quick and easy risotto using arborio rice.

Ingredients

  • 1 cups (250ml) arborio rice
  • 2 olive oil
  • 1 onion, diced
  • 1 fresh basil, chopped
  • 1 spring onion, chopped

Method

Heat half the oil in a pan and add the onion. Sweat the onions for a minute or two without colouring them. Add the rice and mix with the onions.

Now add the vegetable stock a little at a time. Stir it every so often to keep the rice from sticking to the pan. Keep adding stock a little at a time until the rice is cooked 'al dente', or with a little bite.

Take it off the heat and add the remaining 1 tbsp of olive oil, the chopped basil and the spring onions. Stir it all together and serve.
