In this VideoJug video, you can learn how to make a simple beef tenderloin with very little preparation time. The key is to truss it before you cook it.
Hi there. I'm going to show you how to cook a beef tenderloin and, as you can see, it sort of gets a bit narrow at the end, so don't worry, just fold it over like that. I've got my trussing here and I've got lots of it.
I'm going to take it to the midway point because trussing is really the key to it. What I'm going to do for the next couple of minutes is just thread the string around the loin so that when you come back, it will be completely trussed. Well, don't worry too much now that that's trussed up, that things are folded over because what will happen is the proteins will stick the meat together as it cooks.
But it's got a nice air of uniformity to it and it will retain its shape because of that trussing and really, what I'm going to do is just add a little bit of salt and pepper and just a little bit of olive oil. You don't have to but just to sort of lube it a bit up, I think that will work quite nicely, and then, I'm just going to lay that into a tray. Sling that in the oven, the temperature depends on the size.
Obviously, it depends on your oven but I think we're probably looking at maybe an hour on 170 degrees, fan assisted. In it goes. Right, well, that loin's been in the oven for a good hour.
You can just come and have a look at that. What I'm going to do is just leave it to rest for the next ten minutes. What I'd like to do is just take the trussing off and then we'll carve it up.
That really is it. It's very simple once you've trussed it up. That's how you cook a beef tenderloin. .
