How To Cook Broccoli

Paul Ellis shares some tips on how to cook broccoli without is going mushy! You can serve it on its own with a little olive oil, or use it in another dish.

Ingredients

  • 1 broccoli head
  • salt

Method

To prepare your broccoli, hold it by the stem and cut off the florets with a knife. Cut any large ones in haft to keep them all roughly the same size.

Put the florets into a pan of boiling salted water for about 1 minute.

After a minute, remove the broccoli with a slotted spoon and plunge into cold water. This method will ensure the broccoli keeps its green colour and stays crunchy.

To re-heat the broccoli, dip them in boiling water, or heat them in a little olive oil and butter.
