Hi there! I'm Matt from the underground cookery school. And today I'm going to do a video cookery lesson for you. So today I'm going to show you how to cook bulgar wheat which is the classic base for a tabbouleh.

What you would do to make a tabbouleh bye the way for those that don't know is when you take the cooked bulgar wheat is you would add some diced skin tomatos, some onion, spring onion is actually the best and some olive oil. Anyway, what I'm going to do here is the bulgar wheat goes straight into a pan and I'm just going to cove that with water. I've got one portion here, so that's about 200 mil of water to 40 grams worth of bulgar wheat in there.

That goes on the hob, what will now happen is that will come up to the boil, I'll then put a Iid on that, as soon as it does you won't see that because as soon as it comes up to boil I'll do it. Once all the water has evaporated which will be in about 15 minutes time, we'll then take it off, add another butter to it, just fluff it up and then we'll have the perfect bulgar wheat. Well, whilst you were away, as promised I put the lid on.

I did it with tin foil because I don't have a proper lid for this and what happened was, rather in the same way that you would expect something like couscous, I actually going to bring it up to you so you can see. Most of the water has been absorbed if not all and then it's just a question of plating it up. I was banging earlier on about tabbouleh, I was looking for this spoon.

If you are going to make a tabbouleh, what I would generally do is obviously let this cool down, add the spring onion, seasoning, and the tomato, but just for the purpose of this demonstration we're going to use that as a base. I would imagine that you would garnish that dish with maybe some chicken, or possibly some fish on top with maybe some olive oil. But the basic idea by the way, was to show you the basic principles of how to cook bulgar wheat, as I've mentioned just boiling water about 15 minutes, once the water comes up to the boil put the lid on top, let all that water absorb, by all means take a peak from time to time, taste, just check if you're happy with the texture and consistency but in effect that is how to cook bulgar wheat.
