You Will Need

  • 12 large prawns
  • 150 ml amber beer
  • 1 large garlic clove
  • 1 sprig of rosemary
  • 4 unsalted butter
  • 2 extra virgin olive oil
  • 1 flour
  • 2 tsp cajun seasoning
  • 1 tsp worcestershire sauce
  • 1 tsp hot sauce

Method

Heat your frying pan up and add the oil and butter. The oil will prevent the butter from burning. While the butter is melting prepare the garlic and rosemary by chopping finely.

Peel your prawns and add to the pan, sprinkling some of the cajun seasoning on and frying gently on one side. Flip the prawns over and add the rest of the seasoning.

Add the prepared garlic and rosemary and stir in. Mix in the flour to create a kind of roux. Add the liquids next: first the worcestershire sauce, then the hot sauce and finally, the beer. Stir and cook for another five minutes before serving.
