Hi there. I am Matt from the Underground Cookery School, and today, I am going to do a video cookery lesson for you. I am going to show you how to cook squid but first, you need to prep it.

Now, in order to see how to prep squid, check out the VideoJug video on how to prep squid. Well, the cooking bit is probably the easiest bit. You can use butter, but I like to use vegetable oil.

I think, whenever you do pan fry anything, my advice is always use vegetable oil because vegetable oil burns at a much higher temperature. Therefore, there is less risk of whatever it is you are cooking getting burnt. So, all I am going to do now is just take the squid that we have prepared, throw that into a hot pan.

That pan, by the way, was heating up for about a minute before you came onto film. The other, the real secret of cooking squid is not to overcook it. So, you are actually just showing it to the pan.

So, I am turning it over. I mean, I am cooking maybe thirty seconds a side, granted these, you know this is a baby squid anyway, but not long at all. If you overcook squid, they just go rubbery and that's that will probably do.

So, I am going to take those out now, they're beautifully cooked, there you go and then just to finish it off, what you can do is let's just get a little cloth. So, what I am going to do now is just cut that into little strips and serve it however you like together with the wings on a plate. There we go.

A little dash of black pepper, bit of salt, and there you have how to cook squid. .
