How To Cook Couscous

Couscous has a long line of tradition throughout the ages and continues to do so in a tastier manner. Simon Fernandez of FerdiesFoodLab in London will guide you through a simple couscous recipe with a citric twist.

Ingredients

  • almonds
  • 1 egg
  • salt
  • 1 medium white onion
  • 25 ml olive oil
  • 75 g mixed dried fruit
  • 400 ml orange juice
  • 25 g couscous

Step 1: Prepare The Almonds

Chop your onion into small dice pieces. Whisk up the egg white thoroughly in a mixing bowl, and add the almonds along with a pinch of salt. Mix these ingredients together and then place onto a greased baking tray. Space them out. Sprinkle some more salt over the top, and place in the oven for about 15 minutes.

Step 2: Combine Ingredients

Bring a saucepan to a medium heat, and place the diced onions into a saucepan and fry them off until they become a light brown colour. Once you achieve this color, add some mixed dried fruit to the saucepan, and then the couscous.

Step 3: Attend To The Almonds

Take the almonds out after 15 minutes, mix them up and turn them around, and then put them back in for another 5 minutes.

Step 4: Heat The Orange Juice

In a separate saucepan, add orange juice, and bring it to the boil. Once it is boiling add it to the ingredients. Give this a stir until the ingredients absorb all of the orange juice.

Step 5: Serve And Garnish With Roasted Almonds

Serve the couscous onto a serving plate and then evenly sprinkle the roasted almonds onto the couscous.
