How To Cook Egg Pasta With Summer Vegetables

Step 1: The Recipe
My name is Giorgio Locatelli, I am a cook, and I'm going to show you how to cook some Tagliolini Alle Verdure Estive, which in English is like pasta with summer vegetables.
Step 2: Vegetables
First you must cut some corjet, cut the tail, chop them very finely as if they were tagilini. So the whole idea is to cut all the vegetables in the same shape as the pasta. Cooking must be about blending ingredients, so if you have an idea, any vegetable that you have available at that time of the year would be good for that.
Some peas would be perfect. The peas I would just bust and just serve them. I remember of a time when I was little and we would just help someone at home -the job of the kids was to shell the peas.
Sometimes the people tend to use the tomato all the time as a tomato sauce, which is a misguided thing to do because in reality the tomato is very good just cooked for a couple of minutes like that. Any herbs -and they are available- as well like some parsley and some basil.
Step 3: Pasta
Ok, now we are ready with all of the vegetables, we're going to get the pasta. The mixture of the pasta is half a kilogram of flour with 18 egg yolks. We workand pull it together to look like a square, and then we are going to start to pull it down.
I always suggest to make the pasta the day before and let it rest. Then it is quite thick in your hands, and it feels like it would be too thick to make a lasagna. So you will have to leave it a bit thicker so that you have quite a good consistency when you bite in on the vegetables.
Step 4: Tagolini
This is the machine for the tagolini, and it is ready to be cooked with the vegetables. Now we've arrived with all of our vegetables, all our herbs, and everything has been cut, the pasta is ready, so we're going to cook it now.
Extra virgin olive oil, add the vegetables one by one. You'll have to fry them, that's the main thing. All of the vegetables must just melt -let them slap, just like that- and add the tomato as well.
Step 5: Stew
As you can see the vegetables are stewing gently. I'm now going to add a little bit of white wine, for flavoring. The vegetables are now ready, so I'm now going to cover them up and let them cook or stew for about five minutes like that.
You want to keep it al-dente. You don't want it to cook like a stew for hours; you want that nice crunchiness. At this point I'll add a little vegetable stock. And a little bit of water would be absolutely perfect like that.
Step 6: Boiling
Turn the fire completely down. In the mean time we're taking the pasta and we're dropping it into the boiling water and stir it about 30 times. That's all you need to do with this pasta. This pasta will cook very fast.
Step 7: Serve
As you can see the colors are coming together and it looks like it was made to be together, doesn't it? We're going to prepare it now and put it on the plate. You know this is a very simple plate of pasta, this is something very savory, something very good, something very healthy - something that I would like to eat for my lunch .Salute!
