  • 1 tsp garlic, chopped
  • 1 tsp olive oil
  • 1/2 lime, juiced
  • pinch of sea salt
  • pinch of black pepper
  • pinch of paprika
  • pinch of chilli powder

Step 1: Make the Marinade

Take the pork loin and trim off all silver skin. Place the loin into a food bag. Add 1 tsp chopped garlic, a pinch of salt, a pinch of pepper, a pinch of paprika, a pinch of chilli powder, some olive oil and lime juice.

Step 2: Marinate the Loin

Rub the loin to distribute the ingredients. Seal the bag, get rid of any air in the bag and leave for 1 hour to marinate.

Step 3: Grill the Loin

Once marinated, take loin out of the bag and scrape off the garlic. Head a griddle to medium heat, cook loin for 2-3 minutes on all four sides. Then transfer to 180C oven for about 8 minutes.

Step 4: Rest, Carve and Serve

Check the loin is cooked, take it out of the oven, allow to rest for 5-10 minutes. Carve and serve.
