I'm going to show you today how to cook halibut. I've got a nice non-stick pan on the stove. I've got some fresh olive oil.

I've got some butter and some salt and pepper. I'm going to keep it very simple, a nice hot pan. I've got nice fillets, probably about 3 to 4 oz.

fillets. They're quite thin so they don't take literally long to cook. Obviously, if they're quite thick, they're going to take a bit more time.

If they are quite thick, I would suggest to put the fish in the oven just to make sure it's cooked all the way through but we don't need to do that today. So, a nice hot pan, a nice bit of olive oil, now, what I do with the butter, right at the end, I'm going to add the butter to the fish. You don't want to add it now because it will burn.

So I'm just going to put the olive oil in there, a nice non-stick pan. Put that end away from you. This is not going to take long at all.

I don't want to overcook it. I don't want it to dry. I want it to come out moist.

I still want to sort of eat into my fish. So at this stage, a nice bit of salt and pepper, think about what your personal flavors are. I mean, I do like my butter and I do like my lemons, so I might do that right at the end.

So I'm just frying that off. Keep an eye on it. I don't really want to walk away from it.

I want you to see how far my fish is going to brown off. Adding the butter at the end keeps the flavor on the fish, and it stops it from burning if you just add it at the early part. So here we go, butter in there.

Turn over. That butter will add a nice bit of flavor to the fish. You'll get a nice bit of color now.

The butter won't be in the pan for too long, like I said, it'll start to burn. Put on another bit of salt and pepper. I want to keep my fish nice and moist.

I don't want to overcook it. I would like to see a well cooked fish. There's nothing worse than a fish that's been overcooked and too dry.

So I'm taking it off. See that butter starting to caramelize now. There's a nice nuttiness coming from the butter now.

At this stage, I could add lemon juice or lime juice. It's nicely cooked. It wasn't there for too long.

Remember when you've got your fish on a dish or on a plate, remember it's still cooking. So at this point, this fish is probably three-quarters cooked but it's still finishing up the cooking process. So, this is probably still a little bit under.

I'll try that. Another thirty seconds and that will be absolutely perfect. Remember, you don't have to fully cook your fish.
