How To Cook Herring Roe

You Will Need

  • 300 g herring roe
  • 40 g butter
  • 50 g flour
  • 2 capers
  • 1 parsley
  • salt
  • pepper
  • 1/2 lemon, juiced


Season the flour with salt and pepper and coat the roe in it. Do this just before cooking so the flour doesn't go soggy! Heat some butter in a pan and pan fry on both sides until golden brown and firm.

Remove the roe from the pan and wipe away any burnt butter with some kitchen towel. Add more butter and lightly brown, being careful not to burn it. Once the butter is brown, add the capers and the parsley and squeeze in the lemon juice.

While the dressing is still sizzling, pour or spoon it over the top of the roe and serve.
