- 1 oil
- 1 onion, chopped
- 1 garlic clove, crushed
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 courgette, grated
- 800 g tinned chopped tomatoes
- 2 tomato puree
- 1 tsp red wine vinegar
- 1 tsp sugar
Heat 1 tbsp of oil in a pan, then add the chopped onion and crushed garlic. Cook for a few minutes until the onion has softened but has not taken on any colour.
Add the chopped peppers and the courgette. If your don't have these ingredients in your fridge, use any other vegetables you have around, just make sure you grate them up so they cook evenly.
After 5-10 minutes the vegetables should be soft. If they start to stick during the cooking process, just add a little water.
Add the chopped tomatoes, the tomato puree and the sugar, and mix everything together. You could also add some chopped fresh herbs or dried herbs from your cupboard if you have any.
Reduce the heat and allow the sauce to cook for about 10 minutes until it has thickened. Once it has cooked, blend it up to your desired texture.
You can use this sauce on pasta, chilli con carne, or any other recipe where a tomato sauce is required.
