You Will Need

  • 1 kg rope grown mussels
  • 4 shallots
  • 3 cups (750ml) white wine
  • 2 garlic cloves
  • 1 parsley bunch, chopped
  • 100 ml single cream
  • salt
  • pepper
  • olive oil

Start by chopping your shallots, garlic and parsley and set aside.

Next you will have to prepare your mussels. Pull off any 'beards' that are attached to them, then rinse them in a colander to remove any grit still stuck to them.

Fry up the shallots and garlic in a little olive oil until slightly browned. Next add the white wine, salt and pepper and bring it to the boil.

Once the wine starts to boil, add the mussels and cook with a lid on until the mussels open, this should take about 3-5 minutes.

Finally add the cream and parsley, and serve with French bread.
