How To Cook Red Potatoes
Chef Matt Kemp from the Underground Cookery School shows how to bake red potatoes. Cooked in goose fat, these potatoes are crispy on the outside, fluffy and smooth on the inside. Learn how to make the perfect accompaniment to roast beef or lamb with this video.

Ingredients
- red potatoes
- goose fat
- salt
- pepper
Step 1: Prepare the Potatoes
Peel and quarter your potatoes, add to a pan, cover with cold water and bring to the boil. Remove when only slightly cooked. Drain the potatoes, place back in the pan and add some black pepper and salt.
Step 2: Add some Goose Fat
Add some duck or goose fat to a baking tray and bake in the oven for 10 minutes. Add the potatoes to the heated duck fat and fry.
Step 3: Bake the Potatoes
Add to the oven for 1 hour at 180C. Remove, season with some more salt, pepper and serve.
