How To Cook Sausage
Paul Ellis, who runs a cookery school, discusses cooking of sausages through the oven, boiling, and through the pan. He describes the thorough process of cooking the sausages in these three methods. In addition, he specifies methods for doing a barbecue.
I'm going to show you today how to cook sausages. Now, my three favorite ways: through the oven, boil them, through the pan. So I'm going to free cook these sausages in the water.
I'll refresh them in cold water, drain them all out, so if I'm doing like a barbecue, or if I want thoroughly cooked, I'll know they're cooked and I'll just brown them off. So in the pan, it goes, the oil just warm enough now. Hear that sizzle.
It's actually got plenty of oil in the pan. You don't want to over oil it. All I'm doing now is actually, slowly really cooking my pork sausage over a medium heat.
I've got a pan here now with my sausages that have been cooked already. So, you can cook those when they come to the end, I can add those to those. So I've cooked these for about 10 minutes in boiling water.
So again, nice little simmer. Pour some in here. If you want to spin up, just get that a little, right there.
Again, you don't want this pan too hot. It's very important to keep the oil temperature down. Obviously, not too much, there's a lot of fat that comes from the sausage as well, and they're burning quite nicely in the pan.
Easily, they come to a cook. These are fully cooked so what I'm doing is just browning them up. So when I'm grilling my sausages, I will actually just need a bit of oil, nice oil, just slightly turn them over.
Maybe turn them over about 4 times. Give a nice even color. For the oven, probably at about 180.
Nice hot oven, again on a tray, some oil, straight through the oven, again to half way through, just check them, just turn them around, don't take them, that's all. Remember, the majority of the sausages are pork, so they have to be fully cooked. So, I'm cooking one, brown it off, finishing off, it's coming to a nice color now.
I love the smell coming from my fresh bangers. Finishing them off there now, get that one in. Coming back to more sausages, the ones we fried earlier on, nice and golden brown, take them out.
And then the ones I boiled, fully cooked inside, come to a nice - just browned them off. So like I said before, probably, boil them for about 5-10 minutes, cooked them off, refreshed them off, stretched the pan, want them nice and dry and panned out, no more, stretched them out in this hot pan and the result is absolutely fantastic. Like I said, if you're doing a barbecue, cook them off, and there you go, just get this color off.
