Ingredients
- scallops
- oil
- butter
- salt
- lemon juice
Method
Scallops that have been kept on ice in their shells will have opened slightly. Using a butter knife, go slightly up the hinge there, twist, and the shell should pop.
Push there and rub against the shell. As it opens up, take the top shell off and remove the sac at the back by running your knife just behind the scallop. You can also take the frills off.
To cook the scallops, fry in a hot pan for around 1 minute on each side with some oil and butter, a touch of salt and a squeeze of lemon. Alternatively, you can grill them, but keep the scallop on the bottom shell while grilling.
