- 1 sea bass, filleted

To pan fry sea bass fillets, heat some vegetable oil in a pan on a medium heat. Cut some small lines into the fillet to ensure that it doesn't shrink or burn and season with salt and pepper. Turn the heat up and cook skin side down for around a minute and a half, until the edges turn white. Flip the fillet over and cook for another minute on the other side. Remove from the pan and leave to rest for a minute before serving.
To roast sea bass fillets, lay it on a bed of lemon and roast in the oven at 180 degrees for around 6 minutes. To poach sea bass, place the fillets with some white wine in a bag made of tin foil. Place in the oven at 200 degrees for around 20 minutes.
A whole sea bass can be stuffed, rubbed with olive oil and roasted in the oven for around 30 minutes.
