How To Cook Shredded Pork

Ingredients

  • pork belly
  • carrots
  • celery
  • leeks
  • onions
  • barbecue sauce
  • sourdough bread
  • fresh coriander
  • Swiss cheese
  • dill pickle

Method

Place the pork belly in a roasting tray with the chopped vegetables and cook in the oven for around 2 hours at 160 degrees.

Leave the meat to rest and once slightly cooled, place it on a board. Pull off the skin and then pull the meat into thin strips using two forks.

Place in a bowl and pour in some barbecue sauce. Add some chopped fresh coriander. To make an open pulled pork sandwich, take two slices of sourdough, add some pork and a slice of Swiss cheese. Place under grill until the cheese begins to melt. Top with a dill pickle and some extra fresh coriander and serve.
