Step 1: Prepare the cucumber salad

  • 2 tbsp olive oil
  • 1 tbsp coarse salt
  • 1 tbsp cayenne
  • 1 tbsp paprika
  • 1 tbsp garlic granules
  • 1 tbsp black pepper
  • 1 tsp onion granules
  • 1 tsp dry oregano
  • 1 tsp dry thyme
  • 4 fresh cod fillets
  • for the salad:
  • 1 cucumber, sliced
  • 250 g natural yoghurt
  • 1 tbsp chopped mint
  • olive oil
  • salt
  • a squeeze of lemon juice
  • 2 bowls
  • 2 spoons
  • 1 large frying pan
  • 1 metal spatula

Step 2: Mix the herbs and spices

In a bowl mix together the coarse salt, cayenne, paprika, garlic granules, black pepper, onion granules, oregano and thyme and put them to one side.

Step 3: Coat the fish with spices

Rub each side of the cod with the spice mix, giving all the fillets a generous coating.

Step 4: Fry the fillets

Put the olive oil into a large frying pan and place it over a high heat. Fry the fillets on each side for about 6 minutes.

Step 5: Serve and garnish

Remove the fish from the pan, place it onto a serving dish and garnish with the cucumber and yoghurt salad.

    I don't think this classifies as cajun, imo. Too many refreshing spices and not enough hot spices. :? Seriously, all those spices are not necessary and olive oil is too strong of a taste for the fish...
