How To Cook Squid

Ingredients

  • squid
  • flour
  • olive oil
  • couscous
  • salt
  • pepper
  • chilli

Method

Cut off the tentacles. On the body, cut just under the eyes and gently squeeze at the beak. Gently put out the guts and the backbone. Pull the skin off by placing two fingers inside the body at the wings. Run your knife up the inside of the body to remove any remaining guts.

Squid can be cooked in a number of ways. For a simple and quick meal, cut the squid into rings, rub in flour and pan-fry on a high heat for 1 to 2 minutes. Alternatively, you can keep the squid whole, stuff with cous cous and grill.

You can also confit the squid whole or in rings. Place in an overproof dish and cover with olive oil, salt, pepper and chili. Make sure the oil covers the top of the squid. Place in an oven on a low heat for around 10 minutes and fry for around 30 seconds in a preheated pan.
