Ingredients

  • 250 g ricotta cheese
  • salt & pepper
  • 50 g toasted pine nuts
  • 200 ml stock
  • chopped herbs
  • basil, chopped
  • parsley, chopped
  • 3 tbsp tomato sauce
  • cannelloni tubes

Step 1: Cook The Chard

Slice up your rainbow chard stems and add them to a pan with olive oil in it. Cook the chard for a few minutes until soft.

Step 2: Prepare The Cannelloni Filling

Put the chopped parsley and basil into a bowl with 250g ricotta cheese, and season with salt and pepper, then mix well. Add the toasted pine nuts and stir again.

Step 3: Add The Chard Leaves

Chop up the leaves of the chard and add it to the stems. Season the chard and mix until the leaves have wilted, then add a little stock. Add the chard to the ricotta mixture and stir through. Taste for seasoning and add more salt and pepper if necessary.

Step 4: Assemble The Cannelloni

Spoon the tomato sauce into the bottom of an oven proof dish. Spoon chard mixture into the cannelloni tubes and lay them on top of the tomato sauce, then spoon the remaining chard mixture on top, followed by the tomato sauce. Add a little more stock to help the pasta cook, and top with more chopped herbs.

Step 5: Cook The Cannelloni

Place the cannelloni into an oven at 180 degrees Celsius for 25-30 minutes. Check the pasta is cooked all the way through before serving.
