How To Cook With Sea Scallops

Chef Giancarlo Caldesi teaches how to make seared sea scallops. These scallops are made simply with lemon, white wine and some butter. This dish is easy, quick and absolutely delicious.

Ingredients

  • 4 scallops
  • 2 parsley
  • 10 g butter
  • 30 ml white wine
  • 1/2 lemon, juiced

Step 1: Prepare the Scallops

Take your fresh scallops, removing the sinew and the roe. Add some olive oil to a pan and heat until pan is very hot. The pan needs to be hot to really sear the scallops rather than just cook them.

Step 2: Pan Fry the Scallops

Season the scallops on each side with pepper and salt. Add the scallops to a pan, they should begin to sizzle from the start. Allow to sear on one side then turn and sear on the other side. Then add 20-30ml of white wine, some lemon juice, 10g of butter and 2 tbsp parsley.

Step 3: Plate the Scallops

Add the scallops to a plate. Allow the sauce to reduce for another minute or so and then pour over the scallops. Serve.
