Hi there, I'm Matt from the Underground Cookery School, and today, I'm going to do a video cookery lesson for you. Hello. Today, I'm going to show you how to pan fry mackerel but before we pan fry it, we need to take it off the bone.
So, using a flexible knife, what you do is just slide that knife all the way along the backbone and then just cut it off at the head. What we need to do now is just cut out the rib cage which is there. There are a series of bones that run along here.
There are two ways of getting them out. You can either use tweezers to pluck them out or my preferred way, because it's much quicker and you don't really lose that much fish, is just to slice out any pin bones. Right, I've got those fillets in the pan now, and they're coloring over quite nicely around the edge.
I'm pan frying them in vegetable oil because that burns at a much higher temperature. If you use olive oil, it's no good because all that happens is the olive oil burns and then everything tastes of burn. Now, if you can just come over here, I can show you that they're just beginning to color all around the edge which is a great indication that now is a good time just to turn them the other way, which we're now doing.
I'm going to carry on cooking those for about another 30 seconds. I'm just going to season with a little bit of black pepper and a little bit of salt. Right, I'm going to pop those fillets out of the pan like so and just take that pan off and turn the heat down and just pat them dry with a little bit of kitchen towel.
I'm just going to lay those on my dish. But that is how to pan fry mackerel. .
