How To: Cooking Chorizo

In this step by step guide you will learn how to cook traditional Spanish chorizo sausages in a thick red wine sauce. This dish is traditionally served with thyme and bread as a tapa.

Ingredients

  • 250 g uncured chorizo
  • 120 ml red wine

Step 1: Preheat Pan

Heat a frying pan to a medium high heat. Do not add any oil.

Step 2: Start Frying

Cut the chorizo into pieces about a centimetre wide. Add to the pan and cook until crispy at the edges, turning over to fry both sides.

Step 3: Add Wine

Add a big glug of wine. Turn up the heat to reduce it down to a thicker consistency; this should take about two minutes.

Step 4: Serve

This dish is traditionally serve in a clay pot and with plenty of bread. Garnish with a little thyme.
