Ingredients
- Thyme
- Oregano
- Dijon Mustard
- Salt and Pepper
- Olive Oil
- Garlic
- 1 Rack Of Lamb
Step 1: Prepare the Lamb
Remove most of the skin and fat from the lamb, then brown quickly in a pan.
Step 2: Mix the Ingredients
To a mixing bowl, add the mustard, herbs, a glug of olive oil and a finely chopped clove of garlic. Add a pinch of salt and a pinch of pepper and mix together evenly.
Step 3: Coat the Lamb
Spread the mixture over the skin side of the lamb rack. Place in the oven for 15 to 20 minutes. Rest for about 10 minutes, then carve between the bones to serve.
