How To: Cooking Sirloin Steak

This is how to cook a sirloin steak. The first thing you do is to heat up a frying pan on your stove. Make sure that this pan gets really, really hot.

I am going to add the oil now and allow this oil to become extremely hot to the point where it will be smoking. In the meantime, I will season my steak with salt and pepper on both sides. Now, returning to my pan, I am going to wait until it gets hot enough.

The most important thing is to ensure that the pan is extremely hot, so you get a good amount of colouring on both sides of the steak which gives the flavour to your piece of meat. As soon as the oil is hot enough, just prior to putting the meat in the saucepan, I am going to add a small amount of butter, but just at the very last moment. Now, you can see my pan is very hot now; my pan is beginning to smoke.

That is the sort of temperature that I am looking for. Place the butter in your pan. Then, place your steak in your frying pan.

Now, I will allow the steak to colour on one side, then I am going to flip it over and colour the other side, but without cooking the middle of it. What I am going to do next is cook my steak in the oven, which I have preheated at quite a high temperature, about two hundred and twenty degrees Celsius. In terms of the cooking times for the steak, if you want to cook a steak with that sort of thickness medium rare, it will take about five minutes in the oven, if you want to cook it medium, it will take about ten minutes and if you want to cook it well done, it will take about fifteen minutes.

Once you have good colour on both sides of the steak, place it into a little dish and place it into the oven. When it is ready, take the steak out of the oven. This steak goes really well with my peppercorn sauce.
