How To Cut Onions: Cutting onions in one perfect size is a very difficult thing. In his Videojug film, Matt tells us how to dice onions perfectly.
Hi there, I am Matt from the Underground Cookery School. Today, I am going to do a video cookery lesson for you. I am going to show you how to dice an onion.
What we are going to do to begin with is just cut down the root of the onion just down there, and cut straight through that because that root is going to hold everything together. I like using these Japanese knives, you could also use just the conventional one but as long as it is thick here, that's the most important thing, that's the classic chef's and cook's knife or vegetable knife. I am going to take off the layer of ounce of skin.
Now funny enough, that is actually a good example because you got a bit of nastiness there so we just cut that away, you don't waste, just cut until there is no more. Now over here, I am just going to take a similar sort of thing next to the layer, and I am just going to take the end off like that. What I now need to do is just dice almost to the end but not quite, so just go along like that and the idea here is the root that I told you to keep intact earlier on is right at the end and holding every thing together.
So now, that should be sort of like a fan and I am going to go horizontally across this, so I am going to go once. I actually decided I am going to do half of this and the other half will do later. So I am going to cut three or four times through the onion, so now I am showing off because I am in front of a camera, so we will do it five times.
If you go over the top, just hold every thing together, but if you go over the top, you should find that all the dices are roughly the same size and if they are all roughly the same size, what that then means is they all cook at roughly the same sort of timing, over they go.
