How To Cut Up A Whole Chicken

Chef Steve Vardy shows how to properly joint a chicken. Get perfectly prepared legs, breasts and wings with this easy to follow guide.

Ingredients

  • 1 chicken

Step 1: Remove the Legs

Slice the legs off the chicken by turning the breast towards you, slicing between the wing and leg, then pulling to dislocate the joint and remove the leg. Repeat for the other leg.

Step 2: Skin the Breast

Pinch the skin, run the knife through to loosen the skin, then peel it off.

Step 3: Remove the Wings

Remove the wings by slicing around the wing joint, then use the flat part of the knife to break the bone, snap and peel away the wing. Repeat for the other side.

Step 4: Remove the Breast

Remove the wishbone, then slice down the middle and remove the breast.
