Don't make a fuss

As host, your responsibility to ensure everyone else has a good time and isn't unduly affected by your fussy guest. Be accommodating and dignified. If you serve it up and they say "I can't eat that". It's VERY bad manners on their part. You should not get flustered, say something like "I'm very sorry, I didn't know." They should eat what they can and not disturb the flow of the party. Try not to make it a focus of the evening - don't let their eating habits control the conversation, this can be boring for everyone else. If you need to, step in and politely change the subject.
