Hi there. I am Matt from the Underground Cookery School, and today I am going to do a video cookery lesson for you. Now, I am going to show you how to frost or defrost the fish.

And now as you can see, that is frozen rigid. There are three ways of doing this, I am only going to recommend two ways you can do it in microwave. I am really not comfortable doing that unless you really know the microwave oven.

You will end up cooking the fish which you defiantly don't want to do. I think the only two ways, the first way and it is the safest way, by defrosting it in the fridge. So, what I'm going to do is to place this in bottom shelf of the fridge and okay.

It's on a tray and the importance of being on a tray. There is not going to be any drip age if it drips over the other food there is a danger of cross contamination. Now, I recommend fish normally takes about two hours in the fridge two to three hours to defrost a pond.

Now, let's have a look in here it's been here about three and half hours now. As you can see, it's completely defrosted and you can also see there is quite a lot of drip age in there hence the importance of leaving it in tray to defrost. The other way of doing it is probably half the way quick so if you leave that in cold water completely submerged, you're probably looking round about for an hour or hour and half for about a pound or about in weight.

What I would suggest is halfway point changing the water so it remains cold because, of course, both in the fridge and in the water, provided the temperature below 8 degrees, it's impossible for bacteria to develop in that temperature in such a revelatory short period of time in a point where it's going to cause danger to the person who is eating it. So, there you have it, that is how to frost or defrost the fish. And obviously, cooking time varies depending on the size of the fish. .
