How To Dice Mushrooms

I am just going to show you how to dice mushrooms. Now, the first thing is, before you dice them, you need to clean them. My advice is do not wash them because mushrooms absorb absolutely everything, whatever you put on them, they will just absorb it.

So if you try and wash them clean, they will just absorb all that moisture and then when you cook them, they are going to go really soggy. So, my advice is always just very simple, I am still alive so it must work, just give them a good old brush and get any dirt off of them. Normally, if they have been bought through a green grocer or a supermarket, before they are boxed up, they would have been cleaned anyway.

As far as dicing is concerned, you want to try and keep them all roughly the same size. I have taken the end bit off there and I am just going to slice maybe twice that way. Keep it all together.

Then maybe go another two or three times the other way. Then again, I am just sort of consciously trying to keep everything together. Then, when you bunch it up like that, you can just go across the middle.

The idea obviously, is when you cook them, if they are all roughly the same size then they will cook at sort of roughly the same time. So for example, if you are going to pan fry these what you would do is put some butter in the pan, put it on the hob, bring the butter up to a reasonable temperature, but always make sure you do not let the butter burn. If the butter burns it is going to be horrible.

I like to add a bit of thyme, possibly even a little bit of red wine, just burn the alcohol down. Throw the mushrooms in. What will happen is, as I was saying before, they absorb so much that they will absorb all the butter.

Do not put any more butter in, which most people do. Just leave it, and the butter will start to seep out and it will slowly cook. Anyway, that is how you dice mushrooms. .
