How To Do A Chicken Curry

Ingredients
- olive oil
- 4 chicken thighs
- cumin
- fenugreek
- cardamom pods
- mustard seeds
- ground coriander
- ground turmeric
- chilli powder
- 1 onion, chopped
- garlic, chopped
- chopped tomatoes
Method
Fry the chicken thighs in olive oil for 2 to 3 minutes, remove from the heat and set aside. You can also use diced chicken breast.
Dry fry the cumin, fenugreek, cardamom pods and mustard seeds until lightly toasted and they begin to pop. Place in a mortar and pestle and grind together with the ground coriander, turmeric and chilli powder. Remove the cardamom shells from the spice mixture.
Fry the onion and garlic in a hot oiled, oven proof pan. Stir in a heaped tablespoon of the curry powder. Add the chopped tomatoes, stir, and cook down for 7 to 8 minutes.
Add the chicken thighs, making sure the sauce is covering all of the chicken. Cover the pan with a lid or kitchen foil and place in the oven to cook slowly for around 20 minutes.
Remove and serve.
