Remove the head from the fish. Make an incision at the top of the spine and cut down the bone, holding on to the fish firmly to prevent it slipping.
Once you are halfway through, push the knife through, coming out at the tail. Come up the ribcage, cut down the ribs and take the first fillet off.
For the other fillet, turn the fish over. Starting from the tail and holding the fish still with one hand, cut along the bone, come up at the ribcage halfway and follow down. Push through the tail and remove any fins.
