Fillet one side

Place the sea bream on the cutting board with the head to your right and the stomach away from you. Make an incision just behind the gills, from the stomach toward the head, and continue it all the way to the spine but without cutting through it.

Remove the fillet

Insert the knife into the cut and move it along the spine, to separate the meat from the fish. You should be able to feel the knife sliding along the top of the spine. Use a little pressure and feel the flesh coming away from the bones. Slice off the fillet and put it aside.

Fillet the other side

Turn the fish over, so that the stomach is closest to you. Repeat exactly the same process for this side as well. Set the fillet aside when finished.

Remove the stomach and "needle" bones

Remove the stomach bones that run along the ribs. Your fillets will also have "needle" bones in the centre of the fillet that will need to be removed. So, run your index finger along the middle of the fillet and you will be able to feel them. Take your tweezers and grasp each of the needle bones firmly. In one fluid motion, pull the bone from the flesh. Dip the tweezers into the container with water. Have one final feel to check that have all the bones have been removed. Repeat the process with the other fillet.

Fry the fish

Place a frying pan on a high heat and allow it to warm through. Add the oil and when hot add the fillets, skin side down. Press them down with the spatula in order to stop them from curling and for a crispier skin. Season them with salt and pepper. Let the first side cook for a couple of minutes, or until about 1/3 of the flesh around the edges of the fillet has turned white. Turn the fillets over and let them cook for 30 seconds more. Remove them from the pan.
