How To Flavor Rice

Rice can be a little plain on its own, so why not try adding some delicious herbs and spices to it to complement some lovely tandoori meat, or even some simple grilled chicken or fish. Paul Ellis, chef and cookery school owner, shows you his way of flavouring rice.

Ingredients

  • basmati rice
  • 1/2 lime
  • 1/4 lemon
  • 1 coriander leaves, chopped
  • 1 chopped shallot
  • 1/2 tsp garam masala
  • 1 garlic clove, chopped
  • 1 chives, chopped

Method

Boil some basmati rice for about 8 minutes, then drain it and run it under cold water to stop it cooking.

Add the juice of half a lime and the juice of a quarter of a lemon, 1 tbsp of chopped coriander, 1 tbsp chopped shallot, 1/2 tsp garam masala, 1 chopped garlic clove and 1 tbsp of chopped chives. Mix the rice and all the ingredients together and reheat in the microwave or pan.

This rice is perfect with some grilled meat or fish.
