Khol Rabi is a member of the cabbage family and can be eaten in the same way as a Swede. Harvest from mid summer through to the first frosts. It is ready when it's golf ball size or bigger, leave the smaller ones to mature. Sever at the base with a knife, then remove the larger leaves.
Whenever possible, harvest vegetables during the cool part of the morning, and process or store them as soon as you can.
