How To Ice A Buttercream Cake

Whether it is for a birthday, a wedding or for no occasion at all, nothing quite beats the look of a beautifully iced cake! In this step by step guide Julie Storey, owner of the Brighton Cupcake Company, shows you how to do it.

Ingredients

  • 9 inch sponge cake, filled with jam and buttercream
  • buttercream icing
  • jam

Step 1: Coat the Cake

Crumb coat your cake by spreading a very thin layer of icing over the whole cake and letting it dry. Place the cake on a cake board covered in greaseproof paper.

Step 2: Mix the Buttercream

Mix the buttercream with a little boiling water to make it softer and easier to work with, then spoon half of it onto the top of the cake.

Step 3: Smooth the Buttercream

Use a palette knife to smooth the icing on the top of the cake. It is useful to have a turntable for this job. Spread the rest of the icing around the edge of the cake. Run your palette knife all the way around the cake to give it a smooth finish, then slide the greaseproof paper from under the cake.
