Step 1: Preheat oven to 275

  • 1 Uncooked, smoked, bone-in ham
  • ½ cups Dijon Mustard
  • 1 cups (250ml) Light Brown Sugar
  • ¼ cups Fresh Squeezed Orange Juice
  • 240 g Apricot Jam

Step 2: Line sheet pan with foil.

Place ham on foil fat side up. Wrap well with a second piece of foil and bake for three hours. Remove from oven.

Step 3: Preparing the glaze.

Combine apricot jam, mustard, brown sugar, orange zest and orange juice; whisk to blend.

Step 4: Unwrap ham.

With a large sharp knife, trim away rind and all but 1/4-inch of fat. Score fat in a diamond pattern, about 3/4-inches apart. Stud ham with cloves decorative pattern.

Step 5: Carving

Let rest on cutting board until ready to carve.
