Step 1: You will need...
- 4 slices of crusty Italian bread
- 300 g flank steak
- 3 garlic cloves, minced
- 1/2 tbsp crushed black pepper
- 4 tbsp olive oil
- 1 tomato
- 3 slices of onion
- a few rocket leaves
- for the spread:
- 1 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp whole grain mustard
- salt and pepper
- 1 bowl
- 1 spoon
- tongs
- 1 chopping board
- 1 knife
- 1 brush
- 1 tray
- 1 barbecue, either charcoal or gas
Step 2: Prepare the barbecue
If you have a charcoal barbeque light it 30-45 minutes before you plan to cook. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas barbeque, light it up on high and leave it for 15-20 minutes.
Step 3: Make the marinade
Into the bowl put the garlic, crushed pepper, and a half of the oil. Season with salt and mix well. Next, put the steak in the bowl and rub it into the marinade while turning. Let it sit for about 15 minutes.
Step 4: Make the spread
In the mayonnaise bowl combine the Dijon mustard and the wholegrain mustard. Season with salt and pepper and mix .
Step 5: Season the bread
Brush one side of each slice of bread with olive oil and season with salt and pepper. Turn the bread over and repeat the same thing.
Step 6: Barbeque the steak and bread
Place the steak and two slices of bread on the barbecue. After 2 minutes, turn the bread over. Whenever the flames get too high, splash over a little water to prevent the meat from burning.
A minute or so after turning the bread, remove it from the barbecue and replace it with the other two slices and then turn the meat over. Turn the second lot of bread after 2 minutes. Then wait a further minute before taking off the bread, followed by the steak. The steak will be medium-done.
Step 7: Slice the steak
Allow the steak to rest for about 5 minutes before slicing. Then, cutting against the grain, make thin slices of the meat.
Step 8: Put the sandwich together
Spread the mayonnaise and mustard mixture over all four slices of bread and add the sliced steak. Now follow with a small helping of rocket topped with tomato and onion. Place the other slices of bread on top and cut the sandwiches in half.
Step 9: Serve
Serve immediately with crisps or French fries.
