How To Make A Basic Quiche

A great description of how to make a classic vegetarian staple, the quiche. Alex Connell, from the Cordon Vert in Chesire, presents an easily adaptable recipe and straightforward directions for even the most amateur of cooks.

Ingredients

  • 1/2 medium size onion
  • 3 eggs
  • 50 ml milk
  • 5 g fresh parsley, chopped
  • 120 g sliced tomato
  • 35 g cheese, grated
  • short-crust pastry

Step 1: Blind-Bake The Pastry

Roll out the short-crust pastry. Place into a lined baking dish and blind bake by lining with parchment paper, adding baking beans and baking for about 10 minutes by 180C.

Step 2: Make The Quiche Filling

Finely slice half an onion and soften in a hot pan with some butter. Crack 3 eggs into a bowl and whisk. Add 50ml milk, 5g fresh chopped parsley and 35g strong grated cheese.

Step 3: Add The Filling To The Pastry

Remove the pastry from oven. Add the softened onion, the egg and milk mixture and fill almost to the brim. Top with 120g sliced tomato, a sprinkling of cheese and another sprinkling of chopped parsley.

Step 4: Bake

Add the quiche to the oven for 35 minutes at 180C. Remove, allow to cool and serve.
