- 1 onion, grated
- olive oil
- 2 cloves garlic, crushed
- 500 g tinned chopped tomatoes
- fresh basil, chopped
- 300 g penne pasta
- 150 ml double cream
Heat some olive oil in a warm pan. Add the onions and allow them to sweat briefly before adding the chopped garlic. Add the chopped tomatoes, salt, pepper and double cream, stir through and leave to reduce for around 10 minutes. Once the sauce has reduced, add a handful of fresh chopped basil and warm through.
Cook the pasta according to pack instructions. When cooked, stir into the sauce and warm through. Serve straight away and garnish with some fresh basil leaves.
