How To Make A Cashew Curry
Curries are all about flavors and aroma. This dish has been given a really delicious twist by adding cashew nuts which make it richer and tastier.

Ingredients
- 1 onion, chopped
- 1/2 tsp fenugreek
- 1/2 tsp coriander
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 1/2 tsp chilli powder
- 1 tsp garlic, chopped
- 1 cups (250ml) tinned tomato
- 1/2 cups (120ml) coconut milk
- 1 cups (250ml) diced potatoes
- 1/2 tsp lemon juice
- 1/2 tsp baby corn
- 1 cups (250ml) cashews
- 1 parsley, chopped
- vegetable oil
- olive oil
- pepper
- 1/2 cups (120ml) mange tout
Method
Heat vegetable oil in a wok, then add your onion. Mix around, then add your spices and your garlic.
Add the tinned tomato, the coconut milk, the potatoes and the lemon juice and give it a good mix. Cook this for about 2-3 minutes.
Add the baby corn and mange tout. Cook for another 2 minutes.
Add most of your cashews to warm through, saving a few for a garnish.
Plate up, sprinkle over your remaining cashews, the chopped parsley and a bit of olive oil and pepper.
