How To Make A Cashew Salad

Cashew salad is what we're doing next. Now, I've got all my ingredients for the salad here, but the key to any salad, I think, is in the dressing and the good thing about doing a cashew salad is I can get to show you how to do a proper house dressing. I'm going to do some olive oil in a bowl.

Always make the dressing in the bowl that you're going to toss the salad in and make it first. A bit of white wine vinegar. Little bit of lemon juice.

I always like dijon mustard, but you know, whatever you like. Some people prefer the seedy one. And then just give it a good old mix until it emulsifies.

Right, now that's a beautiful emulsion there. I'm very happy with that and that's the base of our salad. Use your hands when making a salad - very important.

I've got some hearts of romaine lettuce which I've cut into strips. I've just sliced it along. I'm going to throw that in, like that.

I'm going to add my cashew nuts, couple of generous handfuls. I mean, this is probably enough for, you know, one to two people. I mean, in my house, not going to get much change out of one person.

And then, just for the hell of it, because I think it's a nice combination, I'm going to add a little bit of blue cheese. So, I'm just going to give that a nice mix. As I said earlier on, go in with your hands.

Take this all out. That's quite a nice starter portion and I think, you know, as is always the case when you're doing a salad, just make sure that the cheese and the cashew nuts are displayed on the top. Little bit of black pepper.

And there you have, what I think, is a quite magnificent cashew salad. .
