This cheese sauce is very versatil;, you can use it as a topping for your lasagne, with cauliflower or broccoli, or poured over potatoes. Chef Paul Mulvenna-Pegrum shows you how to make it in this step by step guide.

Ingredients

  • 50 g butter
  • 50 g plain flour
  • 1 tsp English mustard
  • 250 ml milk
  • 100 g mature cheddar, grated
  • salt
  • pepper

Method

Start by making the roux. Heat the butter in a pan, then add the flour; mix well and cook the flour a little.

Add the milk to the roux a little at a time, mixing between additions, then cook until it is thick enough to stick to the back of a spoon.

Add the cheese and mustard and bring up to the boil while whisking.

To make a quick cauliflower cheese, pour some of the sauce over cooked cauliflower, then put it in the oven at 180 degrees Celsius for about 10 minutes.
